From what I've seen so far, in side quests, I'll get villagers who need a copper hammer or axe sometimes, or a wooden hammer or stone axe. Sometimes copper arrows. I haven't had any quests that ask for bronze tools or weapons. And then there are the quests where the smith wants 3 or 4 iron ore, so that's another reason to get iron.
